Chicken Fried Rice

Quick and easy recipe to make chicken fried rice with sweet chilli sauce
Jars of Tsang Sauce can be purchased online and delivered straight to your door
Makes for 2 people
Ingredients:
200g rice (dry weight)
100g small pieces of mixed vegetables (I used peas, sweetcorn, carrots and greenbeans)
1/2 teaspoon pepper
1 teaspoon sugar
30g soy sauce (I used gluten free)
4 eggs (whisk this together)
8 tablespoon vegetable oil
1 jar Tsang Sweet Chili sauce
Prepare the rice
- Use boiled rice cooked from the night before so the rice is dry
- Once the rice is dry, there may be clumps of rice stuck together. Loosen all the rice with your hands
- Add 5 tablespoons of oil into the wok and heat it up (for about 2 minutes)
- Fry the chicken until its thoroughly cooked (for about 5 minutes)
- Set aside onto a plate
- Add 3 tablespoons of the oil into the wok and heat it up (for about 2 minutes)
- Add the mixed vegetables and cook to desired texture
- Add the eggs and stir everything altogether
- When the eggs are cooked, add in the rice
- Add pepper, salt and soy sauce
- Mix it altogether and until the rice is heated up
- Pour onto a plate
- Get your Tsang Sweet Chilli Sauce
- Heat some sauce in a saucepan until it is bubbling
- Add the chicken into the sauce
- Stir for 10 seconds
- Poor this on top of the rice
